Roasted Bone Marrow

What does bone marrow taste like? It has a deeply satiating buttery, savory, slightly sweet, umami flavor. Roasted bone marrow hits all the primal taste buds you never knew you had! The texture is soft but not mushy, fatty but not chewy, it takes on a creamy texture as the marrow melts in your mouth.

Bone marrow is often spread on toast because it has such a buttery taste. If you do eat it with toast, make sure it is high-quality bread. Since it can make or break this dish consider making your own bread with the best bread recipe.

Ingredients

2 cross-cut beef bone marrow bones

2 cloves of garlic, minced

1 Tbs thyme, rough chopped

1 tsp salt

fresh ground pepper to taste

1 lemon or lime

capers-optional

Method

Preheat oven to 450 F. Put bones, cut side up, on a foil-lined baking sheet or a cast-iron skillet. In a small bowl, mix together garlic, thyme, salt, and pepper. After about 8 minutes, sprinkle the garlic and herb mixture on the bones. Bake bones until the bone marrow has begun to separate from the bone, about 15-20 minutes. Remove from the oven and finish with a little fresh zest from a lemon or lime. Cut a piece from the lemon or lime and give it a little pinch over the bone marrow. The acid from the lemon or lime with the fat gives a nice brightness along with a little zest. Capers are also a nice addition if you have them on hand. Dive in and enjoy!
