Ultimate Frittata Recipe

Frittatas are so easy and customizable that you could eat one every day of the week! And this ultimate frittata recipe is perfect for breakfast, lunch, or dinner. A frittata is like a crustless quiche or a super-sized omelet you don’t have to flip, perfect for slicing and grabbing out of the fridge for a quick healthy breakfast.

The best part about a frittata is that it is so easy to make. Fill it with your favorite vegetables, cheese, meat, and you have a well-balanced meal in every bite. Make in a 10-inch cast iron skillet or oven-safe skillet, and cook your ingredients first before filling with gently beaten farm-fresh eggs.

Ingredients

1 dozen eggs*

3 Tbs ghee or bacon grease*

1/2 cup milk*

3/4 tsp salt*

1/4 tsp pepper*

1 cup washed kale (center rib removed)

1 pound chopped thick-cut bacon

1/2 cup cheese of your choice

*This is the basic recipe, add on all the farm fresh vegetables, cheese, meats, and herbs that your heart desires! Just make sure you cook the vegetables and meats before pouring the basic recipe into your custom combo.

Method

Preheat your oven to 350°F. Then, heat 3 tablespoons of ghee ( if you are using bacon cook the bacon first and reserve 3 Tbs of the grease) in a 10-inch cast iron or oven-safe skillet over medium-high heat. Add your vegetables of choice, in this case, kale. Cook, stirring occasionally until wilted, about 5 minutes. Meanwhile, whisk 12 farm-fresh eggs in a medium bowl with ½ cup of milk, ¾ teaspoon salt, and ¼ teaspoon pepper. Pour the egg mixture and any herbs, cheese, and/or meats (pre-cooked) into your skillet, stir gently to distribute, and cook just until edges start to pull away from the pan. This will take 5 to 7 minutes. Transfer skillet to oven and bake until middle is set, 15 to 20 minutes.
