Here’s a tip for using with Flank Steak:

Scoring the outside of a flank steak can help prevent it from curling when grilling and let the marinade get into the meat. Here's how to do it:

  1. Place the Flank Steak on a Cutting Board: Lay the flank steak flat on a cutting board with the grain running horizontally.

  2. Use a Sharp Knife: Use a sharp knife to make shallow cuts or scores across the surface of the steak. Make the cuts about 1/4 inch deep and spaced about 1 inch apart.

  3. Cut Against the Grain: Ensure that you cut against the grain of the meat. This means cutting perpendicular to the direction of the muscle fibers.

  4. Score Both Sides: Flip the flank steak over and repeat the scoring process on the other side. This will help prevent the steak from curling as it cooks.

  5. Massage the Scores: After scoring both sides, gently massage the steak to help the cuts open up slightly. This will further prevent the steak from curling during cooking.

By scoring the outside of the flank steak in this manner, you create small incisions that allow the meat to relax and expand evenly as it cooks, reducing the likelihood of curling.
